Parsnip purée is great with fish or roasts and is a favourite.
2 large peeled and diced parsnips
Salt & pepper to taste
½ litre milk
½ litre cold water
100ml vegetable oil
100g butter
For the parsnip puree, boil up the water with the milk. Add the prepared parsnips to this and boil up until the parsnips are soft in the centre. Place the whole lot in a food processor with a large knob of butter and salt and pepper. Blend together. Set aside. To serve the dish, put a generous dollop of parsnip puree on each plate.
