This is a fast and simple recipe for delicious pikelets. I usually add some blueberries.
3/4 cup milk
1 egg
1 cup self-raising flour
1 tbsp caster sugar
melted butter
Whisk the egg and milk together in a small basin. Sift the flour and the sugar into a bowl. Add the dry ingredients. Whisk until smooth.
Heat a non-stick frypan over a medium heat and brush with a little melted butter. Drop level tablespoonfuls of the mixture into the pan and cook until bubbles appear on the surface. Turn and cook the other side for about one minute.
Cool and serve with butter and honey.
