Kofte

Kofte are Turkish meatballs which are sometimes grilled on a stick. They can be made from ground lamb, beef, or a combination of both.

Ingredients
½  onion
1 slice of bread
handful of fresh mint
2  tablespoons  tomato paste
1 garlic cloves
½ teaspoon salt
½ teaspoon ground cumin
¼ teaspoon ground cinnamon
¼ teaspoon paprika
1/8 teaspoon ground allspice
½ kg finely minced lamb
1 egg
plain yogurt

Preparation
Put the slice of bread in a food processor and blitz. Add to the food processor the onion, garlic and mint and blitz again. Now place the minced lamb in a bowl and add the contents of the food processor, together with tomato paste, salt, cumin, cinnamon, paprika and allspice. Mix by hand and then add a beaten egg and mix until combined.
Divide mixture into 12 equal portions, make a sausage shape and place each shape on a metal or bamboo skewer. Place the skewers on a heated grill on the stove and cook until done.
Serve with yogurt.
